Aloo Paratha Recipe – Stuffed Indian Potato Flatbread
Aloo Paratha is a popular North Indian stuffed flatbread filled with spicy mashed potatoes and herbs. Perfect for breakfast, lunch, or dinner with curd, pickle, or butter.
🧂 Ingredients:
For the Dough:

2 cups whole wheat flour

1/2 tsp salt

Water (as needed)

1 tsp oil (optional)
For the Stuffing:

3 medium potatoes (boiled and mashed)

1 green chili (finely chopped)

1 tsp grated ginger
-
2 tbsp coriander leaves (finely chopped)

1/2 tsp cumin seeds
-
1/2 tsp ajwain (carom seeds)
-
1/2 tsp red chili powder
-
1/2 tsp amchur (dry mango powder) or lemon juice

Salt to taste

Make the Dough:

In a bowl, mix flour, salt, and water. Knead to a soft dough. Rest for 20 minutes.

Prepare the Stuffing:

In another bowl, mix mashed potatoes with all stuffing ingredients. Taste and adjust spices.

Assemble Paratha:

Divide dough and stuffing into equal balls.

Roll a dough ball, place stuffing in the center, seal it like a dumpling.

Gently roll it into a flat round paratha.

Heat a tawa or pan. Cook the paratha on both sides with ghee or oil until golden and crispy.
