Baingan Bharta Recipe – Smoky Roasted Eggplant Mash
Baingan Bharta is a North Indian-style mashed eggplant dish made by roasting brinjal over an open flame and cooking it with onions, tomatoes, and spices. Best served with roti or paratha.
🧂 Ingredients:

1 large baingan (eggplant/brinjal)

1 onion (finely chopped)

2 tomatoes (chopped)
-
1 green chili (chopped)
-
1 tsp ginger (grated)
-
1/2 tsp cumin seeds
-
1/4 tsp turmeric powder
-
1/2 tsp red chili powder
-
1/2 tsp garam masala
-
1–2 tbsp oil
-
Salt to taste

Fresh coriander leaves (for garnish)
👩🍳 Instructions:
🔸 Step 1: Roast the Baingan

Wash and pat dry the eggplant.

Grease it lightly with oil and roast directly over gas flame.

Keep rotating until skin is charred and inside is soft.

Cool, peel off skin, and mash the flesh. Set aside.
🔸 Step 2: Prepare the Bharta

Heat oil in a pan. Add cumin seeds and let them splutter.

Add chopped onions, green chili, and ginger. Sauté until golden.

Add tomatoes, turmeric, red chili powder, and salt. Cook till tomatoes soften.

Add mashed baingan and mix well.

Cook on medium flame for 6–8 mins, stirring occasionally.

Add garam masala and garnish with fresh coriander.
