🥘 Creamy Kaju Curry Recipe – Rich & Delicious Cashew Masala

## 🧾 Ingredients:

- ½ cup whole cashews (kaju)

- 2 tbsp oil or ghee

- 1 onion (finely chopped)

- 1 tsp ginger-garlic paste

- 2 tomatoes (pureed)

- ¼ cup fresh cream or malai

- 1 tsp red chili powder

- ½ tsp turmeric powder

- 1 tsp coriander powder

- ½ tsp garam masala

- Salt to taste

- Fresh coriander for garnish

- 1 cup water (as needed)

## 👨‍🍳 Instructions:

### 🔹 Step 1: Roast the Cashews

1. Heat 1 tsp ghee in a pan.

2. Add cashews and roast them lightly until golden.

3. Remove and keep aside.

### 🔹 Step 2: Prepare the Gravy

1. In the same pan, heat oil.

2. Add chopped onions and sauté till golden.

3. Add ginger-garlic paste – cook 1 minute.

4. Add tomato puree, turmeric, red chili, coriander powder, salt – cook until oil separates.

### 🔹 Step 3: Finish the Curry

1. Add roasted cashews to the gravy.

2. Add 1 cup water and simmer for 5 minutes.

3. Add cream and garam masala. Stir well.

4. Garnish with fresh coriander and switch off the flame.
