🥕 Eggless Carrot Walnut Cake – Moist, Nutty & Wholesome
Carrot cake ki roots medieval Europe tak jaati hai, jahan carrots ko natural sweetener ke roop me use kiya jaata tha. Hamara eggless version soft, moist, aur full of warm flavours hai — loaded with fresh carrots, crunchy walnuts, aur spices jaise cinnamon. Perfect with tea or as a light dessert!
🧾 Ingredients:

1½ cups all-purpose flour (or whole wheat flour for healthier option)

1 cup grated carrots (fresh)

½ cup brown sugar or jaggery powder

½ cup curd (yogurt)
-
½ cup milk
-
¼ cup oil
-
½ tsp baking soda
-
1 tsp baking powder
-
1 tsp cinnamon powder
-
½ tsp nutmeg (optional)

½ cup chopped walnuts
-
1 tsp vanilla extract
-
1 tsp lemon juice or vinegar

Pinch of salt
👩🍳 Steps:

Preheat oven to 180°C. Grease a loaf or round cake tin.

In a bowl, whisk curd, sugar, milk, oil, vanilla, and lemon juice.

In another bowl, sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Combine dry and wet ingredients.

Fold in grated carrots and chopped walnuts.

Pour into tin and bake for 35–40 minutes, until toothpick comes clean.

Cool before slicing. Serve plain or with cream cheese glaze.
