🍛 Veg Kolhapuri – Spicy Maharashtrian Sabzi
📝 Description:
Veg Kolhapuri is a spicy mixed vegetable curry from Maharashtra, known for its bold flavors and rich coconut-based gravy. Perfect with roti, naan, or jeera rice!
🥕 Ingredients:
For the Veggies:

1 cup cauliflower (florets)
-
1/2 cup green beans (cut)
-
1/2 cup carrots (sliced)
-
1/2 cup capsicum (cubed)
-
1/2 cup green peas
-
1 potato (cubed)
For the Kolhapuri Masala:
-
2 tbsp dry grated coconut
-
1 tbsp sesame seeds
-
1 tbsp poppy seeds (khus khus)
-
1 tbsp coriander seeds
-
1 tsp cumin seeds
-
1 tbsp oil
-
2 cloves
-
1-inch cinnamon
-
2 dried red chilies
For Gravy:
-
2 onions (chopped)
-
2 tomatoes (pureed)
-
1 tsp ginger-garlic paste
-
1/2 tsp turmeric
-
1 tsp red chili powder
-
1 tsp garam masala
-
Salt to taste
-
2 tbsp oil
-
Fresh coriander leaves (for garnish)
🍳 Instructions:
Step 1: Boil Vegetables

Boil all the mixed vegetables until soft but not mushy. Drain and keep aside.
Step 2: Make Kolhapuri Masala
-
Dry roast coconut, sesame, and poppy seeds until golden. Remove.

In the same pan, add oil and roast coriander, cumin, cloves, cinnamon, and red chilies until aromatic.

Blend all the roasted spices with a little water into a smooth paste. Your Kolhapuri masala is ready.
Step 3: Prepare Gravy

Heat oil in a pan. Add onions and sauté until golden.

Add ginger-garlic paste and sauté 1 minute.

Add tomato puree and cook until oil separates.

Add turmeric, red chili powder, and salt. Mix well.
Step 4: Final Cooking

Add the Kolhapuri masala and sautĂ© for 2–3 minutes.

Add the boiled vegetables. Mix gently.
-
Add some water to adjust gravy consistency. Cook for 5–6 mins.

Add garam masala and fresh coriander. Mix and turn off heat.
🍽️ Serving Suggestion:
Serve hot with naan, paratha, or steamed rice.
