🍲 Vegetable Pulao Recipe – Simple One-Pot Indian Rice Dish
Vegetable Pulao is a quick and flavorful rice dish cooked with basmati rice, fresh vegetables, and aromatic Indian spices. It’s perfect for lunchboxes, weeknight dinners, or festive meals!
🧾 Ingredients:

1 cup basmati rice (soaked for 20 mins)

2 tbsp oil or ghee

1 bay leaf
-
1 tsp cumin seeds
-
1-inch cinnamon stick
-
2 cloves
-
1 small onion (sliced)
-
1 tsp ginger-garlic paste
-
1 green chili (optional)
-
1 carrot (chopped)
-
¼ cup green peas
-
¼ cup beans (chopped)
-
¼ cup capsicum (optional)
-
Salt to taste
-
1½ to 2 cups water
-
Chopped coriander or fried onion for garnish
👨🍳 Instructions:

Prepare the Rice:
Soak rice for 20 minutes, then drain and keep aside. -
Sauté Spices & Veggies:
Heat oil/ghee in a pot or cooker.
Add cumin, bay leaf, cinnamon, cloves – let them sizzle.
Add sliced onion and sauté till golden.
Add ginger-garlic paste and green chili – cook for 1 minute.
Add all chopped vegetables and cook for 2–3 minutes. -
Add Rice & Cook:
Add soaked rice, salt, and mix gently.
Pour water (1½ cup for pressure cooker, 2 cups for open pot).
Cook until rice is done and water is absorbed. -
Fluff & Serve:
Let it rest for 5 minutes. Fluff with fork.
Garnish with coriander or fried onions.
